It doesn’t matter which one is your favorite! It can be leafs salad, vegetables salad, rice or pasta, with meat or fish, a good dressing can only make it better.

Most of the salads (except the ones with fresh vegetables and leafs) should be left for at least one hour to take all it’s flavors. When it comes to dressings, they are better if they are held in the fridge for a couple of days.

Classic herbs vinaigrette
Great with leafs and vegetable salads, as well as with the ones cereal or rice based

Ingredients:

  • 5-6 teaspoons of wine vinegar or sherry vinegar;
  • 1 teaspoon of Dijon mustard;
  • 5-6 teaspoons of olive oil;
  • fresh parsley, dill, chives, marjoram and basil;
  • salt and freshly grind white pepper;
  • sugar;

Mix the vinegar with the mustard, salt and pepper, add the olive oil and stir it until creamy. Finely chop the herbs and combine them. In the end grind some salt, pepper and add a little sugar!

Vinaigrette with lemon and thyme
Great with leaf or vegetable salads. It can be also used in white meat or fish salads!

Ingredients:

  • 5 teaspoons of lemon juice;
  • 1/2 teaspoon of lemon zest;
  • 8 teaspoons of olive oil;
  • 1/2 teaspoon Dijon mustard;
  • 4 lemon slices;
  • salt, pepper, sugar;
  • thyme;

Take the lemon slices and cut them in pieces (medium size), blend the olive oil with the lemon juice, mustard and a little sugar. Now add the lemon and grind some salt and pepper. Chop the thyme and stir everything gently.

Raspberry and walnuts vinaigrette
Very good with bitter leafs salad as rocket salad, radicchio or mandiva.

Ingredients:

  • 6 teaspoons of raspberry vinegar;
  • 6 teaspoons of walnut oil;
  • 6 teaspoons of rapeseed oil
  • 1 teaspoon of Dijon mustard;
  • freshly grind salt and white pepper;
  • 1 shallots
  • parsley, tarragon, pimpinella, dill and basil

 

Mix the oils with the mustard, salt and the white pepper. The herbs will be finely chopped and added to the aromatic vinaigrette.

Kefir and chives dressing
Great with green salads, cucumbers salads as well as with the salads that have beef

Ingredients:

  • 3.5 oz Kefir;
  • 3.5 oz cream;
  • 3 teaspoons lemon juice;
  • 1 teaspoon of wine vinegar;
  • a little Dijon mustard;
  • salt and white pepper;
  • 1 little bit of sugar;
  • chives;

The kefir and the cream will be mixed until smooth. Add some salt, pepper and sugar. Cut the chives and add them to the dressing!

Yogurt, wild and cultured greens
Good with leafs, vegetables, cereal with white or red meat salad!

Ingredients:

  •  1 oz of cheese
  •  7 oz of sour yogurt;
  • 4 teaspoons of olive oil;
  • 4 teaspoons of lemon juice;
  • freshly grind salt and pepper;
  • mint, parsley, basil, sorrel, chervil, pimpinella and rocket;

Smash the cheese with a fork and add the yogurt, olive oil and the lemon juice. Stir them really good! Put some salt and pepper. Cut the herbs in small pieces and include them in the dressing!
